UX: Replace help side bars with dialogs #310

The side bars / drawers with contextual help info are not easily closed. Suggest replacing them all with dialogs.

Also there's a bit of glitch with the close button which seems to be hard to hit.

The sidebar glitch is fixed since PR #329 - so this issue is low priority.
