JupyterBook supports interactive plotly graphs, and doesn't need to be rebooted every few days. It might be worth the oneoff time cost to do this - mostly it's just a matter of copy-pasting into cells of a notebook - anywhere where it's st.subheader or st.write, into a markdown cell, and otherwise just with plotly graphs (reordering them to be in between the right headers) and/or image calls. Then it's cake to copy our existing jupyter book configs and build scripts from one of our other repos. Probably < 2-3 hours total.
