I was trying to launch my 1.21 server and it returned this error

you are using the wrong java version. 1.21 requires java 21. This is not a fabric api issue

I have tryed every version including 21 and they all still don't work

then you are doing it wrong. the issue tracker is not meant for getting assistance with your computer setup. please use the discord or the discussions tab. This is not a Fabric API mod issue.
