Users need to be able to use more than a single collection, or configure which collection names to use.

Describe the feature, and optionally a solution or implementation and any alternatives

We should also clarify in the docs, what happens if you ingest the same data twice to the same collection. Does it overwrite existing vectors? Does it duplicate them?
