revisit the data structure

At the moment we're capturing information using Markdown and being largely consistent about file structure, however the current structure isn't ideal to be able to export into different formats

We should agree on the types of fields and metadata we need for each story, and what type of structure that would have.

Ultimately, the goal is to have this done sufficiently well so it's easy to export in multiple formats (JSON, CSV, etc) with a consistent structure
