Handle when we list new collections on "staging" but not ready for production

We get an error and the subgraph fails:

Subgraph failed with non-deterministic error: Error while processing block stream for a subgraph: store error: invalid input value for enum sgd217814.token_standard: ""

Should be able to write a test that handles some collection that we don't know about yet but a listing comes through. The subgraph should treat it as if it never happened.
