Tenderloin
5lb beef tenderloin
preheat over to 450
season with salt and pepper
in cast iron skillet, heat 4 tablespoons butter and 4 tbs olive oil
sear meat 3 to 4 min on each side
put skileet in oven and cook for 30 min, uncovered (medium rare)
remove from oven, put on cutting board, cover with foil and let rest 15 min before serving
