🎁 [Feature Request]: Update CI workflow to output updated filenames

What is the feature you would like to see?

The CI currently builds a number of executables as output. This issue is an effort to simplify the naming convention being used for the various files.

NOTE: This change needs to be coordinated with a corresponding documentation update (issue to be linked).

• Rename subspace-cli- to pulsar- for all builds.
• Rename -macos-aarch64- to -macos-apple-silicon- where appropriate.
• Remove -skylake where appropriate.
• Rename -v2- to -legacy- where appropriate.

The updated output should give us something like this:
