As 'Microsoft stated it collected between 23.000 to 25.000 different kinds of events about the use of Office ProPlus' [1] it would be fun, to hear every individual 'event' while using it.

I think the IP ranges and URLs can be found here:
https://learn.microsoft.com/en-us/microsoft-365/enterprise/urls-and-ip-address-ranges?view=o365-worldwide

As the 'Berlin Group' ('International Working Group on Data Protection in Technology') confirms [2], 'Telemetry and Diagnostic Data' (by Operating Systems including iOS) also contains unique IDs, Wifis and location data [3].
So it would be nice to not only focus on Google and Facebook, but on all tracking, including OS manufacturers like Apple and Microsoft.
For Apple it should be easy since they use their own assigned /8 block: 17.0.0.0/8
