Most ereader brands already have a color model out there, people also read on their phones/tablets, having b/w images enforced there is... not optimal.
Would it be possible to add an option to disable the image post-processing?

I think it's a good idea. You can read an ebook even on a tablet or phone (if you're desperate). This conversion to grayscale is just a way to reduce the size of the final ebook.
Anyway: a color ebook will display correctly on a traditional e-reader.
