Need to figure out GDAL version #1

Right now it is hard-wired to my local GDAL version, need to somehow set pyproject.toml so it installs whatever the local version is.

In lieu of pinning, easiest way is to try to install (poetry install) then if it fails due to gdal version mismatch, pip install the appropriate version for the system then try to install via poetry again
