See rasterio/rasterio#3064. It looks like it might need to be rewritten but I'm not sure exactly how yet.

We are largely moving to odc.geo.xr.to_cog but I need the band names preserved for coastline tides (e.g. timestamps), and it doesn't (natively) do that.
