'last activity' doesn't seem to be updating

@jamescrowley pointed out that some projects do not update 'last activity'. Here is an example:

ClimateTriages shows last activity: '4 months' for the following project:
https://github.com/Green-Software-Foundation/if

The https://issues.ecosyste.ms was failing, but cloudflare caches continued to work so it just didn't update anything.

I've got the issues service working again, and I'm resyncing all issues to get these updated again now.

I suspect that the date on that project is the last activity on issues on that project with a label "good-first-issue" or "help wanted" for example, rather than just when the main branch was last pushed to or had other issues opened.

Would it make sense to rank and show both: good first issue activity and project activity?
