Doc: Fix formatting in input-elasticsearch plugin docs

Typo in heading is causing doc build failures because links can't resolve. This error was released in plugin v4.19.0, and must be fixed in source and all branches that are compatible with that version.

Update

The missing resource name is preventing plugin docs for the Logstash Reference from generating successfully. A version bump and publish is required to get plugin docs generating successfully again: logstash-plugins/logstash-input-elasticsearch#200
