The newly introduced label categories are not yet included in the JSON-LD export.
I use the export to produce a document where the recipes are ordered by cuisine (for which I use the categories).

Suggest to include the name of the category in the value string as shown below (where cuisine and diet are the names of categories).

            "cuisine: italian",
            "diet: vegetarian"
        ],
