Problem

The documentation does not address how to use cross-region inference (CRI) in Jupyter AI v2. This is required for some models like Meta Llama 3.2 on Amazon Bedrock.

See #1114 for additional context.

Proposed Solution

Add instructions on using CRI on Amazon Bedrock through the "Bedrock (custom/provisioned)" provider.
