Log matching statistics for analysis

We need to collect useful statistics on matching in order to analyze our fingerprint matching accuracy. TBD if logging this to datadog, dumping them in a database, or exporting them to a spreadsheet is the appropriate way forward. Some fields that may be useful to capture on a per-request basis: agent_id, stored quality_score, request quality_score, capture_date.
