Use terminology of "categories" in code

Currently the codebase refers to the "things" streamers stream as games. This was pretty much true a few years ago, but nowadays the landscape has changed and now non-games are common on Twitch. Therefore, in the codebase, variable names and comments, etc., should refer to "categories", not "games".
