by default in docker-compose.yml so that users easier see how to access smtp of Mailhog. It took me a while to figure it out. To anyone who has trouble configuring it: the hostname to connect to Mailhog is
host.docker.internal
and not "127.0.0.1" and the default port is 1025.

@pdmwu AFAIK mailhog is not being installed on a standard wordpress installation by default. I suggest you make a pull request for the readme that explains how to open ports for custom services and then put mailhog as an example service.
