Update OIDC example and include reference to the current version of Keycloak

Keycloak reference in the examples folder is outdated. Steps do not match Keycloak UI / settings.

The Keycloak version used in the example is 25.0.2 (Docker container). The reference to the setting up Keycloak server in the step 4 does not match the version.

Detailed, how-to style, step by step tutorial of how to setup NIC and Keycloak

Include steps to set up the Keycloak server for this example. Make sure the steps match used Keycloak version (docker 25.0.2).
