Is your feature request related to a problem? Please describe.
The k8s_event_input operator sometimes re-ingests logs.

Describe the solution you'd like
Determine whether or not the relevant k8s API can be queried with any kind of checkpoint, perhaps a timestamp, and then persist this value to the offsets database.
