I did four things:

Changed the Dockerfile to reflect us moving away from pip install deployment and implementing uvicorn deployment
Added a launch_docker.sh script to both test and provide an example for how one might launch this Dockerfile
Removed antiquated files that were just taking up space in the container
Updated the README a bit
