Is your feature request related to a problem ?

As of 67.5.0 I'm not been able to specify fallbackScrapeProtocol for additional service monitors in chart values

Describe the solution you'd like.

Replicate the work done in #3683 for fallbackScrapeProtocol

Describe alternatives you've considered.

Managing separate manifests for my additional service monitors.
