This reverts commit 8058180.
Give the `cov$functions` columns more informative names, for interactive development. Opened the same PR against the S7 branch, for a cleaner diff. That PR should automatically switch over to main once #580 is merged. |

This builds on #580 by adding support for external generics registered via
S7::`method<-`.
