It would be great if we could change this setting on the OLED screen without the configurator

I think there is no need to have telemetry_provider on the OLED. This param is only taken into account for DIY GPS, FrSky X and FrSky D. I think nobody uses DIY GPS and FrSky D. You may set it as INAV, and in case you change to FrXky X telemetry from Ardupilot, it will be detected and auto confifured as APM10.
