Align the old faithful proto to yellowstone-gprc (or vice-versa)

There are subtle differences that we might be able to align, or that we shouldn't align - I know @fanatid is working on a protocol v2 for the grpc protocol and maybe this is more similar to the faithful protocol so we shouldn't worry too much about replicating the above but rather aligning with the future protocol for Grpc?

Not v2 protocol, new plugin/app would use same protos from yellowstone-grpc
