- 1 1/2 cups cooked chickpeas (see note below for dry beans/instant pot cooking)
- 1/4 cup chopped small red onion (about 1/2 small red onion)
- 2 cloves garlic, minced or grated
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 3 tablespoons tahini
- 1/3 cup breadcrumbs
- 1/2 cup chopped cilantro (may also use parsley)
- 1/4 canola oil
- mash the chickpeas
- add the other ingredients (except oil)
- form into patties 1/2 inch thick and fry 3 min on a side
- serve on toasted bun with spicy mayo, arugula, tomato slice and red onion slice
Instant pot: 1 c dry chickpeas, 3 c water, 1/4 onion, 1 bay leaf and 1/2 tsp salt on HIGH for 48 min, 15 min release. You will have a few chickpeas left over for other use.
