Wallet data usage: Create stats for all connections and protocols if possible.

It would be nice if we could have data send/receive stats per connection, or possibly per protocol as well.

Note from @sdbondi: We may be able to integrate metrics that libp2p provides. Our current code base and libp2p use prometheus, but libp2p uses the latest version, and there are a lot of breaking changes.
