Use appropriate community(ies?) for Zenodo workflow(s)

A single community is currently hard-coded for all Zenodo uploads:

This thoth community previously represented the Thoth Open Archiving Network, but has now been reworked to represent a more generic container for Thoth-related uploads. A new toan community has been created to represent TOAN specifically.

Awaiting discussion from the wider team as to whether Zenodo "hosting" should be kept separate from Zenodo "archiving", etc.
