I've been using tabularray recently https://ctan.org/pkg/tabularray - it seems to have a cleaner structure for managing complex tables, especially merged cells (row and col) and cell colours.

Thank you for the suggestion. We had a look in it and it has truly a cleaner syntax and offers some interesting features. However, it's always a big effort to include another table model, even if the syntax resembles those of standard latex tables. So I would suggest to wait since someone pays for this feature or I decide to implement this in the rare case I have not much to do. Therefore, I would leave this issue open and flag it as feature.
Just as a side note, our @LupinoTech developed a new TeX table package called htmltabs. You can already create it with docx2tex with the -t parameter. We'll publish the package soon here.
