Fitness’s supports java 21 ? Because in fitness document it says not supported. Can someone confirm this please.

It is supported (as are Java 11 and 17, since #1525). Part of regular build process, see https://github.com/unclebob/fitnesse/actions/runs/12213835244/job/34073890509

Where in the documentation does it say it is not supported? Could you create a PR to fix that?
