fix: UIBuilder test

Description of changes

Fixes:

• issue with cypress invalid config file when using require('cypress') - likely traced to recent changes in node/cross-spawn, but that is out of scope for this fix
• issue with installation of required dependencies leading to compilation issues during test execution
