So, ultimately, the only difference with the iOS build is target_environment = "catalyst", right?
Did you test the artifacts?

I made target_environment directly accessible from build.sh:

./build.sh ios arm64 catalyst

I also added target_environment as an input to the GitHub workflow, so this PR should be much shorter now.
