Workable-version

This is ready for my project. Once I've installed the equipment I will likely update again to tidy up the code, add some extra comments and any final tweaks but I'm confident(ish) that this one should be ok.

I've added in an option to add a 20x4 LCD panel to help with debugging when not connected directly to the arduino environment.
Using a library I found for the sensor which gives moderately more control on readings as the sensors sometimes return spurious readings - this might be because I'm testing on my desk though.
