## Directions

1. Mix all ingredients except butter in a stand mixer with a dough hook for 5
minutes on medium speed.
2. Add butter and mix for another 5 minutes until a smooth dough ball forms.
3. Rest for 1 hour in a covered bowl (or up to overnight)
4. Divide dough equally into 6 pieces, and shape into tight balls. Cover and
rest for 10 minutes.
5. Roll each ball into a 7 inch (18cm) rope. Cover and rest for another 10

6. Prep water bath: in a large pot, combine baking soda + honey and 3-4
quarts/liters of water. Bring to a boil while you shape the pretzels.
7. Prep a sheet tray with parchment paper or a silicone mat. Preheat oven to
425F/220C.
8. Roll each rope into a 30 inch (75cm) rope. Shape into pretzels.
9. One at a time, dunk the pretzels into the water bath for 30 seconds on each
side, then place on the sheet tray.
10. Brush with melted butter and sprinkle with toppings.
11. Bake for 15-20 minutes until deeply brown.
12. Cool on a wire rack for 10 minutes before serving.
