Not all genes controlling color are testable. This is because not enough is known about them in real life for me to give accurate gene information.
In horses, this includes flaxen, sooty, liver chestnut, seal brown, wild bay, rabicano, mealy, how quickly a gray horse changes color, the size of blanket on a leopard complex horse, variations in spotting pattern for leopard complex, some white markings on the face and legs, whether the horse shows dapples, whether duns will have a frosted mane and tail, and small shade variations in coat and eye color. Not all of these are completely genetic and many of them also include some randomness.
In donkeys, this includes dun, cameo, ivory, tyger spotting, white markings, and small variations in shade.
