Ingredients:

Steps:

  • Heat enough water for all lasagna pasta in a large pot;
  • When the water is boiling, add the pasta and cook until al dente.
  • Cut the onion in cubes;
  • In a large pan, cook the onion and mushrooms;
  • When onion and mushrooms are soft, remove them from the skillet;
  • In the same skillet, add the spinach, cook until soft and re-add the onion and mushrooms, let them rest;
  • Pre-heat the oven to 375 degrees F;
  • When all ingredients are cooked and the pasta is drained, add a very small layer of sauce to the bottom of a lasagna pan;
  • Add 3 slices of pasta for the first layer;
  • Cover the pasta with sauce;
  • Add next 3 slices of pasta for the second layer;
  • Add the mushrooms, onion and spinach mix; ** You can add feta cheese here for extra goodness
  • Add next 3 slices of pasta for third layer;
  • Cover with the reminder of sauce;
  • Add mozzarella and Parmesan cheese to the top, then send to the oven;
  • Cook until cheese is melted and sauce is boiling, you can finish it on broil;
  • Remove from oven, add pepper to the top and cut into 8 equal parts, enjoy!!
